Strawberry'n'Cream Muffins (Vegan Friendly)


You've picked as many strawberries as you could.. now what? Are you freezing them? Cooking them?


Today I am in the kitchen feeling inspired and looking for a vegan friendly recipe that can be enjoyed as breakfast, snack or dessert! Pinterest is my favourite search for recipes as you can easily find the perfect recipe for you and your family. After browsing many pins, I have settled on this vegan 'Strawberry'n'Cream' recipe by My Darling Vegan.


The recipe is simple and calls for Soy milk instead of regular milk, and is only 160 calories per muffin. If you are unsure of Soy Milk, omit for regular milk - the recipe turns out just as yummy!

Now without further delay, here is the muffin recipe!



Ingredients:

  • 1 cup soy milk

  • 1 teaspoon apple cider vinegar

  • 2 cups all-purpose flour

  • 2½ teaspoons baking powder

  • ¼ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup + 2 tablespoons granulated sugar

  • ¼ cup + 2 tablespoons canola oil

  • 1 teaspoon vanilla extract

  • zest of 1 lemon

  • 1 - 1 1/2 cups fresh strawberries sliced thin

Directions:

1. Preheat the oven to 375F. Spray a muffin tin with cooking oil and set aside (or muffin liners).

2. In a small bowl combine soy milk and apple cider vinegar. Set aside to allow milk to curdle.In a larger bowl combine flour, baking powder, baking soda and salt. Set aside.Mix together sugar, canola oil, lemon zest, and vanilla extract. Add soy milk/vinegar mixture and stir to combine. Stir in the dry ingredients until well incorporated. Be careful not to over-mix - a few lumps are okay. Fold in the strawberries.

3. Spoon into muffin tins, filling each cup about ¾ full. Bake for 20-25 minutes until a knife inserted in the middle comes out clean.Remove from heat and allow muffins to cool before removing from pan.

4. Enjoy with your family!

Optional Glaze:

  1. 1 1/2 cups (150 grams) confectioners' sugar, sifted to remove any lumps.

  2. 3 to 4 tablespoons of Soy Milk, regular Milk, or water.

  3. 2 teaspoons vanilla extract (optional)

Mix ingredients together and add Soy milk as needed (if mixture is too lump add teaspoon at a time.. it is easier to add more, than adding too much at the beginning) ​Check out our Pinterest board of must-try seasonal recipes!
